BOONDI LADDU

Ingredients: Gram Flour / Besan : 1 Cup Water : 3/4 Cup Salt : a Pinch Baking Soda : a pinch Food Colour : Yellow (Optional) Sunflower oil Raisins Cardamom Powder : 1/2 Tbsp Ghee : 2 Tbsp For Sugar Syrup: Sugar : 1 Cup Water : 1/2 Cup  Method of Preparation:  Sieve besan for 2 to 3 times to remove the lumps from the flour and pour  this to a bowl .. To this  add water ,salt  and colour (optional) to make a batter. The consistency should be bit loose than dosa batter. Test the consistency by pouring very small amount of batter through a ladle (the ladle with small holes all over it).  Start making boondis using the batter. Roast raisins in 1 tbsp ghee and keep aside.. Now lets make the sugar syrup.  In to a pan add 1 cup of sugar, cardamom powder  and 1/2 cup water.. Mix well. Boil well till half thread consistency. CARROT LADDU

Carrot Ladoo is an Indian sweet that is often prepared to celebrate festivals. It is a very healthy and delicious sweet dish .It is a quick and easy recipe. Ingredients: Grated Carrot – 2 cups Ghee – 2 tbsp Desiccated coconut – 1 cup Condensed milk – 1/2 – 3/4 tin, adjust according to your taste Cardamom powder – 1/2 tsp Cashews – 1 – 2 tbsp, broken Desiccated coconut –1/4 cup, to roll the laddus Method of Preparation: Heat 2 tbsp ghee at medium heat. Fry cashews until golden and set aside. Add grated carrots to the hot ghee and saute for 10 – 12 minutes till soft and raw smell leaves.   Then Add desiccated coconut and cook for a few minutes.   Next add condensed milk and mix well. Cook for 5 – 6 minutes until the condensed milk is all absorbed. Add cardamom powder and mix well. Switch off the flame. Add fried cashews. Mix well. BREAD COCONUT BALLS

Ingredients: Bread - 10 slices Coconut grated - 1 cup  Sugar - 1/2 cup Method of Preparation: Remove four sides of each bread Crush the bread pieces in a blender Dissolve sugar in little water to get a thick consistency Mix all the ingredients together with your hands & make into a smooth dough Make small balls out of it & keep it aside Heat oil in a fry pan & deep fry these balls in a medium heat till golden brown.

PEANUT CANDY

Kappalandi mittai / Peanut Candy..... which many of you might have tasted during your school days,college days and as hostelers. It will bring back your childhood memories. Everyone love to munch it while relaxing in front of TV or reading a book.... Most of the shops be it a supermarket or local grocery shop has kappalandi mittai (peanut candy).... This is every malayali's favorite snack.....from a very long time. Ingredients: Roasted and skinned peanuts - 1 1/2 cups Jaggery - 1 cup Ghee (or butter) - For greasing the tray Water - 1/4 cup Method of Preparation: Roast the Peanuts on medium heat till toasted and slightly brown in color Keep stirring throughout the process Let it cool down & when the peanuts are completely cooled.....remove their skin. Crush them very lightly In a deep pan on medium heat, melt Jaggery in 1/4 cup Water and strain two  times to get rid of the impurities Pour it back into the pan and boil it...
