IRANI POLA
Pola is a traditional Malabar dish, which is similar to cake,but made without an oven. It is one of the favourite snacks during ifthar time.
It can be sweet or savoury. You can make a wide variety of Pola using eggs, bread, banana, apples, carrots, chicken, fish, meat etc...

For Marination:
- Boneless Chicken - 200g (cut into small pieces)
- Turmeric powder - 1/4 tsp
- Kasmiri Chilli powder - 1 tsp
- Ginger Garlic paste - 1 tsp
- Lemon juice - 1 tsp
- Salt - to taste
For Masala :
- Onion - 2 (medium)
- Ginger Garlic Paste - 2 tsp
- Turmeric powder - 1/4 tsp
- Kashmiri Chilli powder - 1 tsp
- Chicken Masala - 1 tsp
- Garam Masala - 1/2 tsp
For Batter:
- All purpose flour ( Maida) - 1 cup
- Egg - 2
- Milk - 1 cup
- Vegetable Oil - 1 cup
- Black Pepper Powder - 1/2 tsp
- Salt - to taste
- Put above ingredients in a blender and make a smooth batter and keep it aside.
- Capsicum for garnishing
- Coriander leaves for garnishing
Method of Preparation:
- Marinate the chicken using turmeric powder, kashmiri chilli powder, ginger garlic paste, lemon juice & salt. Keep it aside for 15 minutes.
- Heat oil in a pan & fry the chicken pieces. Keep it aside
- Add the sliced onion, green chilly & ginger garlic paste to the oil (same oil in which the chicken fried). Saute it till the onions become translucent.
- Then turmeric powder, kashmiri chilli powder, chicken masala & garam masala and salt. Saute well.
- Add the 3/4 th part of chicken to it & saute for 1 minute. (Keep the remaining part of chicken for garnishing)
- Switch off the flame & keep it asidr to cool.
- Grease a nonstick pan and pour half of the batter. Cook for 3 -4 minutes or it is half done.
- Then put the masala evenly when the mixture is half done.
- Pour the remaining batter on top of the masala.
- Decorate with chicken,coriander leaves & capsicum & close the pan with a lid.
- Cook for 20 minutes on low flame or until it get cooked.
- After 20 minutes u can check the pola using a skewer or knife whether it is completely cooked or not. If it is done switch off the flame or else keep it in the flame until it get cooked.
- Sometimes the top of the pola remain light colored even after it is done. If you want a brownish color flip the pola carefully into another pan & keep it for 1 to 2 minutes in low flame.
